Ikameshi

Ikameshi is a local specialty of Mori Town in the southern part of Hokkaido. Two different types of raw rice (one the typical staple, and the other stickier) are put into a squid's body and simmered in special thick soup with a sweet-flavored soy sauce base. The texture of soft squid and gentle sticky rice complement each other nicely. Ikameshi was invented by Abe Shouten, a local bento box shop, in 1941. In those days, a lot of squid were caught off Mori Town and the shop owner needed to make use of them. After exposure at temporary showcases at department stores in Honshu, the dish became famous.
