北海道的飲食文化(成吉思汗烤肉)/ Food Culture in Hokkaido (Jingisukan)

成吉思汗烤肉是指使用羊肉或小羊肉的烤肉,是北海道的鄉土料理。烤肉專用鍋子形狀很獨特,烤鍋中央是隆起來的形狀。在北海道的超市有販賣著各式各樣調味過的肉片,一般家庭也很常吃成吉思汗烤肉。另一方面,也有販賣成吉思汗烤肉的專用醬汁,沒有調味過的生肉又或者是冷凍肉的成吉思汗烤肉也很受歡迎。吃法是在豆芽菜或是洋蔥上放上肉片再去蒸烤的方式。

Jingisukan is barbecuing using mutton or lamb and is well known as one of Hokkaido’s local dishes. Sometimes it is expressed as Genghis Khan or Mongolian Barbecue in English, but it is assuredly a Hokkaido original dish. Jingisukan uses a special iron pan raised in the middle. Many companies produce Jingisukan meat with flavored sauce, which are sold in supermarkets. You can also buy the sauces separately, and fresh or frozen meat is popular too. Typically, the meat is cooked on the same hotplate as bean sprouts and sliced onion. Of course, there are many Jingisukan restaurants in Sapporo.
